Turkey Pot Pie Soup

If you are like my household, there are leftovers galore.


I’m making a turkey pot pie soup. 🥣


I started with 2 fresh carrots and 2 stalks of celery chopped, 2 qts of turkey broth, added fresh potatoes and frozen corn.


The leftover gravy was added. The green beans from Thanksgiving will go into the pot later as they are already well cooked.


I will add frozen English peas at the end along with 1/2 cup or so half and half for creaminess. Leftover mashed potatoes will thicken the soup if we don’t eat them first. 😊


Simmer on stove or in crockpot until the fresh vegetables are tender. My broth is so well flavored that I don’t need to add salt or pepper. If YOUR soup needs a boost, add chicken bouillon or soup base to taste. Add more broth to get the consistency you desire. You can thicken the soup with instant mashed potatoes if desired.


Since we have cornbread dressing leftover, I will heat up a scoop in my bowl and pour finished soup over it. This is to die for! 😋


No shopping for me today. I need to tidy up my house and rest up from the feasting prep.
