Runzas are a yeast roll filled with a seasoned hamburger and cabbage mixture. They come from the oven resembling a bun. They are delicious served warm with relishes. This recipe came from the Omaha World Herald newspaper. This recipe was adapted from the German settlers who came to Nebraska in the 1800's.
Runza Dough
2 c warm water
2 pkg active dry yeast
1/2 c. Sugar
1&1/2 tsp salt
1 egg
1/4 c. Butter, melted and cooled
6&1/2c. Flour
Mix water, yeast sugar, ands salt. Stir until dissolved. Add egg and melted shortening.
Stir in flour. Place in refrigerator for 4 hours.
Roll dough into oblong shape and cut into 16 pieces. (I cut in half, then cut the halves in half, then the fourths into fourths again. This equals 16 pieces.)
Roll each piece out. Place a portion of the filling in the center. Bring the edges up sealing the dough. Place sealed side down onto greased cookie sheet. Bake at 350 degrees for 15-20 minutes until golden brown. Brush with melted butter upon removing from oven.
Filling:
1-1/2 lbs hamburger
1/2 cup chopped onion
3 cups shredded cabbage
1/3 c. Water
1-1/2 tsp. Salt
1/2 tsp pepper
Dash of Tabasco hot sauce
Brown hamburger and onion. Drain excess grease. Add cabbage, seasonings, and water. Simmer for 15-20 minutes. Cool completely before putting into the dough.
Yield: 16 sandwiches
