Pumpkin Bread
3 c sugar
3 c all purpose flour
2 tsp baking soda
1-1/2 tsp salt
1 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
1 c vegetable oil
2 c pumpkin or 1(16 oz) can
2 eggs
1/2 milk (warmed)
1 cup nuts OR raisins, optional
Mix all ingredients well. Preheat oven to 350 degrees. Spray 9x13 pan with non stick spray. Bake for 1 hour and 10 minutes or until bread tests done. (Test with a toothpick inserted in the center of the bread that comes out clean)
This can be baked in loaf pans as well. Adjustment of baking time may be needed. A cream cheese frosting is a wonderful addition to this recipe.
Cover with foil while still warm to hold in the moisture of the bread.
