Aunt Imogene’s Creamy Chicken Noodle Soup

I have to confess that I'm not really good at being on time with posting the recipes that I mention on my radio segments. It is a process I haven't learned as yet to add recipes to the recipe section. However, I CAN add them to my blog and will get them in the right categories in time.


This recipe is one that I mentioned in segment "One Small Act."


Aunt IMO's Creamy Chicken Noodle Soup


1 tbsp. Butter

1 large onion, chopped

3 cups chopped cooked chicken

48 oz chicken broth

1 can cream of mushroom AND cream of chicken soup, undiluted

6 oz. Thin spaghetti, broken into 1" pieces

3 ribs celery, chopped

6 medium carrots, chopped

1 tsp grated lemon rind

2 cups milk

Salt and pepper to taste

Cheddar cheese, grated


Melt butter in Dutch oven over medium heat. And onion and celery. Sauté until onion is translucent, about 5-7 minutes. Stir in chicken broth, chicken meat, and soups.

Add carrots and lemon rind.

Reduce heat and simmer for 45 minutes.

Stir in milk and spaghetti . Return to simmer until spaghetti is tender, then remove from heat and allow to stand for 10 minutes before serving.


Sprinkle with grated cheese after placing in serving bowl.
